Paalada Cheesecake with a Twist

Onam is the biggest festival in Kerala. This Onam season, make the best of cheesecakes and that's none other than the Paalada Cheesecake but without the Paalada! Make your own Paalada by pressure cooking condensed milk and it would taste exactly the same because the ingredients for the Paalada milk and the condensed milk are exactly the same. Paalada Cheesecake
Ingredients
  • Biscuit base
    • Powdered biscuit - 200 grams
    • Melted butter - 100 ml
  • Cheesecake mixture
    • Cream cheese - 300 ml
    • Pressure-cooked condensed milk - 400 ml
    • Whipped cream - 150 ml
    • Nitta Gelatin (Gold) - 2 tsp
  • Paalada mixture
    • Pressure-cooked condensed milk - 400 ml
    • Fresh cream - 200 ml
    • Nitta Gelatin (Gold) - 1 tsp
Preparation
  1. Start off by pressure cooking condensed milk until 4-5 whistles. Make sure the condensed milk is properly sealed. Let it cool.
  2. Meanwhile, make the biscuit base by crushing the biscuit of your choice and mixing it with the melted butter. Transfer into a spring form pan and set aside.
  3. In a small bowl, bloom gelatin by adding 2 tsp of Nitta Gelatin (Gold) into ½ cup of water. Set aside to bloom.
  4. Meanwhile, in another bowl add the cooked condensed milk and cream cheese, and mix well. Add the whipped cream along with the bloomed Gelatin that has been melted over low heat or microwaved.
  5. Mix well and pour over the biscuit base. Refrigerate for 4-5 hours.
  6. For the paalada layer, mix cooked condensed milk along with fresh cream and bloomed and melted Nitta Gelatin. Refrigerate for another 2 hours.
  7. Slice into pieces as big or small as you like and enjoy.
