Mirror Glaze for Cake or Mousse

It is exciting to get a mirror glaze on cake and mousse! It can be achieved with ease.

Time Required - 20 minutes
Prepare the cake or mousse, do the icing and keep in refrigerator for 2 hours. We will do mirror glaze over this frozen cake.

Ingredients
  • Gelatin – 1 tbsp
  • Sugar - ¾ cup
  • Condensed milk – ½ cup
  • White chocolate – 100 g
  • Water - ½ cup
Preparation
  • Soak gelatin in ¼ cup water and keep aside, 30 minutes prior to preparation.
  • Take sugar, condensed milk and water in a sauce pan, mix well on a medium flame until the sugar completely melts. Do not boil.
  • Add soaked gelatin to this and mix well, without air bubbles.
  • Add this mixture (without cooling) to a bowl containing 100g white chocolate. Allow the chocolate to melt and mix well. Filter it through a fine strain.
  • To above mix, add food colours as per your choice and mix well without air bubbles.
  • Keep in room temperature for a while so that it is no more hot.
  • Pour this mix over the prepared cake or mousse, in the centre first and then towards the sides, in a circular style if it’s a round cake. Keep the cake elevated or keep on a mesh so that excess glaze can drop off from the sides.
  • Keep the cake in refrigerator for 2 hours before serving
